Description
GRAPES:
65% Merlot, 25% Cabernet Sauvignon, 5% Petit Verdot and 5% Syrah
VINIFICATION and MATURATION:
The grapes are harvested by hand and transported in small containers, with separate selection for variety and plot. It follows the de-stemming (separation of the berries from the stalks), and subsequent fermentation in stainless steel vats at controlled temperatures. The duration of the maceration / fermentation varies from varietal to varietal, chosen by the winemaker. After two or three years and more maturation in barriques, the wine is refined, and is followed by a rest in the bottle for another 6 months.
TASTING NOTES:
The nose is very broad, with intense fragrances of wild berries and lively spicy notes. Deep red in color, the taste is harmonious, very balanced, integrated with a good acidity
FOOD PAIRING:
Ideal with red meat preparations, such as braised and roasted meat, game, but also with cured meats, medium-aged and aged cheeses, fossa and marbled cheeses.
